Sunday is here again and it is time for my weekly post! I had a really busy week and I needed some time off. I used my me-time this weekend to bake some delicious Apple-Streusel-Muffins!
They are perfect for cold, rainy winter days! Additionally, they are easy to make and healthier than normal muffins. They are also vegan!

Jacqui’s Vegan Apple-Streusel-Muffins
What You Need
For the Streusel Dough:
60g / 2oz plant based margarine
50g / 1.7oz rolled oats
50g / 1.7oz spelt flour
60g / 2oz cane sugar
For the Muffin Dough:
1 Apple
300g / 10.5oz spelt flour
1 packet vanilla sugar
1 packet baking powder
2 teaspoons of grounded cinnamon
2 teaspoons of grounded almonds
125ml / 4.2floz of sunflower oil (or similar oil)
250ml / 8.5floz of plant based milk (e.g. soymilk)
Muffin papers
Preparation for the Streusel Dough:
Put all ingredients into a bowl and mix it on lowest level with your electric mixer. Use the stir sticks for this. When the dough looks like crumbs, put it in the fridge.
Preheat your oven on 160°C / 320°F on air circulation or 180°C / 355°F on upper- and bottom heat.
Preparation of the Muffin Dough:
Chop the apple into small pieces. You can peel it if preferred, but I never peel apples because my dad always taught me that most of the apples‘ vitamins are directly under its peel! Either way will be fine for this recipe.
Mix up spelt flour and baking powder in a bowl. Add all other ingredients and stir it all up on lowest level for about 2 minutes until it is a smooth dough. If it’s too sticky, add some more plant based milk.
Gently fold the apple pieces into the dough.
Preparation of the Muffins:
With two spoons, place the muffin dough into the papers. Keep in mind, you will need to leave some space for the Streusel dough! After all papers in your muffin tray are filled put the Streusel dough on top.


Put into oven and let bake for between 35-40 Minutes. To check if the muffins are ready, use a toothpick or fork and place it into one of the muffins. If the dough sticks to it and is still raw, the muffins need more time.
Take the muffins out when ready and let them cool down!
